Easy Skillet Zucchini Parmesan

Ingredients
6 cups sliced zucchini (1 really big zuke!)1 pound 93% ground beef1 26 oz jar of Ragu1 egg16 oz 1% cottage cheese8 oz Sargento Reduced Fat 4 Cheese Mexican Blend
Directions
Brown the beef in a large rectangular electric skillet.

Scramble the egg and add it to the cottage cheese with seasonings to your taste (like pepper and oregano)

Slice the zucchini and layer it with the cottage cheese mix. and Ragu.

Top with the mexican cheese, cover and simmer until zucchini is soft.

Makes 6 servings (approx 1 1/2 cup per serving)
