Flakiest Whole Wheat Shortcakes

1 1/2 cups all purpose flour1/2 cup whole wheat flour3 teaspoons baking powder3/4 teaspoon salt3 teaspoons sugar6 tablespoons cold unsalted butter3/4 cup plus 2 teaspoons half and half or cream
This recipe makes 16 shortcakes.
Preheat oven to 450 degrees and place a rack in the center of the oven.
Mix all the dry ingredients together with a fork.
Cut the butter into small pieces, then cut in to the flour until it looks like pea gravel. This can be done with a pastry blender, two knives, or by pulsing in a food chopper.
Add the half and half and stir 5 or 6 times until the dough pulls from the sides of the bowl.
Roll or pat out to about a 9 x 13 inch size rectangle.
Fold into thirds and roll out again.
Fold into thirds and roll out one more time. The folding and rolling helps make the shortcake flaky.
Cut into 16 squares, or use a cookie cutter or biscuit cutter to make other shapes.
Place on a flat baking sheet.
Bake 10-12 minutes till golden brown on top.
Let cool for a few minutes and then split each into two pieces.
Top with fresh fruit and whipped cream.
Enjoy a healthy and guilt-free dessert!

This was SO GOOD! Unfortunately I didn't have whole wheat flour, so we used 2 cups all purpose, and we only had salted butter to use, but these biscuits were amazing! My husband and I both had 2 servings because we coudn't resist the flakiness and deliciously butter flavor! WONDERFUL! - 9/1/12
