Tahena's Eddoe Veggie Stew

* Red Ripe Tomatoes, 5 medium whole (2-3/5" dia) * Onions, raw, 2 cup, chopped * Garlic, 5 clove * Mushrooms, fresh, 6 large * *Bok Choy, raw-shreaded, 3 cup * Peppers, sweet, red, raw, sliced, 2 cup * Lime Juice, 1 lime yields * Eddoe, 3.5 cup * Sunflower Oil (oleic), 2 tbsp * block of firm tofu
in a heavy bottom pan, add oil, chopped garlic, chopped onions, diced eddoes, chopped peppers, chopped mushrooms and sautee until tender. Add lime zest and juice, and roughly chopped tomatoes. 10 min before serving, add diced tofu to heat through.
Season to taste, paprika and chilli is nice.
Serve with cheese sauce & tofu sour cream
