1- 7.5 oz. fire-roasted diced green chiles6 garlic cloves, finely minced1 large onion, diced2 cans (14.5 oz. each) hominy, well-drained1.5 lbs. chicken breasts1/2 tsp. kosher salt4 tsp. Mexican oregano 4cups reduced sodium chicken broth2 cups water3 Tbsp. ground New Mexico red chileGarnishes: sliced avocado, lime wedges, cilantro sprigs & low fat sour cream
In a 5-6 qt. pan, add chicken broth, add water, chicken breasts, green chiles, garlic, onion, Mexican oregano, salt and red chile powder chicken broth over high heat until it boils. Reduce heat to simmer and cover for 30-45 minutes until able to shred chicken breast. Remove chicken from soup and shred. Return chicken to soup and add hominy. Mix and simmer for another 10 minutes. Ladle soup into bowls and garnish as desired.
