Fast and easy carrot soup

Ingredients
6 carrots, chopped1 celery stalk, choppedHalf a large onion, chopped1 garlic clove, chopped1 tsp curry powder1 tbsp vegetable oil8 cups chicken broth or stock
Directions
Saute vegetables and garlic for 5 minutes.
Add curry and cook about 5 minutes more, stirring so curry doesn't burn.
Add broth or stock and bring to a boil.
Lower heat and simmer 30 minutes.
Puree with a stick blender or in batches in a regular blender.
Makes approx. 10 1-cup servings.
