Victory Garden Cucumber Salad

Ingredients
6 cups sliced cucumbers3 garlic cloves pressed1 medium onion sliced2 anaheim peppers sliced1 large tomato chopped2 TBS extra virgin olive oil3 TBS red wine vinegar2 TBS granulated sugarBlack pepper to taste
Directions
Slice cucumbers, place in tupperware of ice water, put in fridge for at least 30 minutes. Remove and drain.
Wisk olive oil, red wine vinegar, sugar. black pepper and garlic.
Add cucumber, onion, peppers and give it a toss.

Place in refrigerator for at least 3 hours before serving (next day it's even better).
Add chilled chopped tomato before serving

Makes 12 1/2-cup servings
