Summer Corn Relish

Ingredients
1 red onion (about 2 cups), diced1 red or yellow bell pepper, seeds removed and diced 5-6 ears of fresh corn (about 5 cups), corn kernels removed from cob3/4 cup celery (about two stalks), diced2 banana peppers, seeds removed and diced1/4 teaspoon salt1 teaspoon cumin seeds2 teaspoons mustard seeds1 cup cider vinegar1 tablespoon flat-leaf parsley or cilantro, chopped
Directions
Combine all ingredients into a large saucepan. Place saucepan over moderate heat and cook, uncovered, until the mixture reaches a simmer. Cook for 20 minutes or until all but 1/4 cup of liquid is remaining in the saucepan. Stir in parsley or cilantro.

Cool then pour into storage containers, seal and refrigerate for up to 3 weeks.

Makes 12 one half cup servings.

    I love this recipe and choose to use parsley, not the cilantro. I also tried using jalapenos instead of the banana peppers for a bite in it's taste. A small amount of finely chopped green pepper is another good addition to this. - 8/13/13
