For the filling:½ cup (1 stick) unsalted butter, melted1½ cups sugar2 tablespoons all-purpose flour½ teaspoon salt9 large ripe peaches, peeled and sliced¾ cup brandy or waterFor the crust:½ cup (1 stick) unsalted butter, softened¾ cup sugar1½ cups all-purpose flour1 teaspoon baking powder¾ teaspoon salt1½ cups apple juice or milk
Preheat the oven to 350 degrees F.
To prepare the filling, melt the butter in a medium-sized saucepan over medium heat. Stir in the sugar, flour, and salt. Mix well. Add the peaches and water. Stir and heat thoroughly, about 5 minutes. Pour the mixture into a buttered deep 9" x 12" casserole dish and set aside.
To prepare the crust, in a medium-sized mixing bowl, cream the butter with the sugar. Add the flour, baking powder, salt, and fruit juice or milk. Mix well. Pour the batter over the filling.
Bake until crust is golden brown, about 1 hour.
Makes 10 servings.
