Greek Salad with Feta and Olives

2 cucumbers, scored, seeded and cubed5 medium tomatoes, seeded and cut into 1" pieces1 cup kalamata olives, pitted, and cut in halves1 cup large green olives, pitted, and cut in halves1 medium red onion, diced8 oz feta cheese, cut into 1/2" squares2 tbsp olive oil1/4 t sea salt, freshly ground1/8 t pepper, freshly ground
In a large bowl, combine cucumbers and onion. Add salt and pepper and mix well. Allow to sit 5 minutes while preparing tomatoes, olives and cheese (this will draw some of the water out of the cucumbers). Add olives and olive oil and mix again. Add feta cheese cubes and tomatoes and toss lightly. Can be served immediately or refrigerate for an hour and allow flavors to blend.
Makes 8 1-cup servings.
