Lo Carb-Gluten Free Pancakes

Ingredients
Two Large eggs1 Tbsp Flax Seed Meal1 Tbsp Soy Flour1 Tbsp Almond Meal (ground almonds)1 Tsp Baking PowderA Pinch o' SaltA couple o' drops o' Vanilla ExtractA wee dash of Stevia SweetenerCanola Oil or something slippery if your pan sticks like mine.
Directions
Mix all the dry ingredients in one bowl (leave out the oil or butter...that is for the pan). Beat the eggs in another. Put the two together. Cook 'em up pancake style over medium heat. Scarf down. Delicious!
