Swiss Vegetable Casserole

Directions
1 can cream of mushroom1/3 cup sour cream1 cup chopped broccoli1 cup chopped cauliflower1 cup carrots1/4 tsp pepper1 cup french fried onions1 cup shredded swiss cheese
Mix soup, sour cream, pepper, and 1/2 cup french fried onions. Mix in broccoli, cauliflower, carrots and 1/2 the cheese. Put in baking dish and bake at 350 for 30 minutes. Add remainder of cheese and french fried onions and bake for 10 more minutes or until bubbly and golden brown.

Big hit at the pot luck I took it to and not much was left. Doubled the batch and it turned out great. I also bought the frozen mixed veggie bag, steamed them to thaw, and tossed them in (I left them larger). Found healthier cream of mushroom and low fat sour cream to reduce calories even more. - 12/12/11

My hubby loved this recipe and told me never to make green bean casserole again! Since I am lazy and didn't want to chop all that veg, I used 2 bags of frozen carrot/cauli/broc mix (the steam in bag kind). I cooked them according to directions, chopped them smaller, and finished the recipe. - 11/13/11
