Zucchini Beef Skillet

Ingredients
1 lb. ground beef1 cup chopped onion1 cup chopped pepper1 1/2 t. salt1/4 t. pepper1 t. chili powder5 cups sliced zucchini (or summer squash, or a mixture)2 lg. tomatoes, chopped1 1/2 fresh whole kernel corn (about 3 ears)2 T. chopped pimento1/4 cup chopped fresh parsley
Directions
Saute beef, onion and green peppers in 12 in. skillet until well browned. Add remaining ingredients. Cover and simmer 10-15 minutes or until vegetables are tender. (May serve over rice if you choose to.)
