Hebert's Red Beans with Smoked Turkey Sausage (2/3 cup serving)

1 package dried kidney beans1 package PictSweet Seasoning blend (onions, celery, bell pepper)2 tsp minced garlic (fresh or refrigerated)1 tsp salt1 tsp black pepper1 tsp hot pepper sauce14 oz Smoked Turkey Sausage
This recipe makes 16-20 1/2-cup servings (depending on how "juicy" you make the beans).
Wash and soak beans overnight. Rinse and put into crockpot.
Or for stove top cooking, wash beans and boil steadily for 45 min to 1 hour, then drain and put back in pot.
This recipe can be made in a crock pot over 8-10 hours or done on the stove in 2-1/2 to 3 hours.
Cover soaked (or boiled and rinsed) beans with water until it is about 2 inches above the beans. Add remaining ingredients, except for sausage.
If in a crockpot, put on medium or low, depending on if someone will be able to stir them within 6 hours or not. After about 6 hours, test beans to see if almost soft. If not, turn up crockpot heat setting. About 30 minutes before it's done, add cut up sausage.
Add water at anytime. It is better to have a little too much water and "boil" it off, than not enough and burn it.
If on stove, bring to a low simmer, and cook about an hour and a half to two hours, stirring occasionally. Test softness of bean. Add sausage and cook an additional 20-30 minutes on simmer.
Serve over about 1/3 to 1/2 cup of rice. White rice is traditional, brown rice is a healthy and delicious alternative :)
Goes great with a slice of whole wheat french bread and a garden side salad, and a big glass of iced tea!
