Black Beans with Lime

Ingredients
1 tbl extra virgin olive oil2 scallions, white and green parts separated, thinly sliced2 cans (16-19 oz) black beans1 tsp chili powder1 tbl fresh lime juice1/4 cup chopped cilantro1/4 cup chopped green bell peppersalt & pepper to taste
Directions
Makes 6 servings.

Rinse and drain black beans and set aside.

In a medium saucepan, heat oil over medium.

Add white part of scallions, and season with salt and pepper. Cook until softened, about 3 minutes.

Add black beans, chili powder, and a splash of water.

Cook until warmed through, about 5 minutes.

Remove from heat, and stir in lime juice and cilantro.

Serve garnished with green part of scallions.
