* *Egg Beaters Egg Whites, 1 cup * *Bread Crumbs - Italian Style (Progresso), 1 cup * *Cereal, Fiber One Original (1/2 cup = 30 grams), 2 cups finely crushed * Eggplant, fresh, 3 eggplant, unpeeled (approx 1-1/4 lb Sliced * Kraft Parmesan Cheese, 1/4 cup * *Hunt's Mushroom Spaghetti Sauce, 2cans * *fresh mushrooms 8 med, thin sliced * *Kraft Finely Shredded Low-Moisture Part Skim Mozzarella cheese, 3 cups
Mix bread crumbs, crushed cereal and parmesan cheese together in bowl.
Dip egg plant slices in egg and then in dry mix. lay flat on cookie sheet sprayed with cooking spray. Bake 5 min. turn bake 5 more min at 375.
Mean while simmer sauce with sliced mushrooms. Season if desired.
Layer rectangular baking dish with sauce, egg plant sauce then cheese. repeat with eggplant, sauce , cheese until gone. Back for 40 min. 350.
