Green Chile Chicken Enchiladas

Ingredients
1 tablespoon butter (add to rice while cooking)1 cup rice (uncooked)1 can chicken broth (to cook rice in)Cook rice before adding to other ingredients3 boneless chicken breast halves, cooked and cubed (or a Rotisserie chicken works well also)1 pound jack cheese (3/4 of the pound cubed and 1/4 shredded for the topping)1 can corn1 (24 oz) green enchilada sauce18-24 corn tortillas
Directions
Mix rice, chicken, cubed cheese (save a little cheese for top) and corn with 1/4 cup green enchiladas sauce, spread a little of the enchilada sauce in bottom of pan. Place a little mixture in each tortilla, roll up and place in pan. Cover with remaining sauce. Sprinkle with a remaining shredded cheese and cook for 30 minutes at 350.

For an added kick, add diced jalapenos into the rice mixture.
