1 tsp Olive oil1/4 cup red pepper, diced1/4 cup red onion, diced1/4 cup tomato, diced2 oz. cooked chicken breast8 jumbo pitted black olives, quartered1/2 cup egg substitute like Egg Beaters1 oz. feta cheeseoregano to tastesalt and pepper to taste
Heat olive oil in an oven-safe omlete pan. Cook red pepper, onion, tomato until slightly softened, about 3 minutes. Add salt and pepper to taste, but remember cheese will add some salt as well. Add chicken and olives and heat through then pour in egg substitute. Top with oregano and feta cheese. Once the egg substitute begins to set on the bottom, remove it from the stove and put it under the broiler. Allow top to get brown and bubbly and cheese to melt, about 5 minutes. Makes 1 serving.
