1 cup flour1 cup sugar1/2 cup cocoa powder1 tsp baking powder1/4 tsp baking soda1/4 tsp salt1/2 cup low-fat buttermilk1/3 cup olive oil1 large egg1 large egg white1 tsp vanilla extract1 ounce semisweet chocolate, melted and cooled
1. Pre-heat oven to 350. Spray 12 cup muffin pan with nonstick spray
2. To make cupcakes, whisk together cake flour, granulated sugar, cocoa, baking powder, baking soda, and salt in medium bowl. Whisk together buttermilk, oil, egg, egg white, and vanilla in large bowl. Whisk in melted chocolate. Add flour mixture, stirring just until blended.
3. Fill each muffin cup two thirds full with batter. Bake until toothpick inserted into center comes out clean (About 25 minutes). Let cool for 10-15 minutes.
