Banana Oat Bran Mini Muffins

1 c whole wheat flour1/2 c oat bran (can substitute oat meal, if you don't have oat bran)2 tbsp wheat germ1/4 tsp No Salt1/2 tsp baking soda1/4 tsp baking powder1 tbsp cinnamon1/2 tsp nutmeg1/2 c packed brown sugar1/2 c apple sauce1 tsp vanilla2 eggs, lightly beaten2 ripe bananas, mashed1/2 c walnuts, chopped1/2 c raisins, not packed
Preheat oven to 350, & spray mini-muffin pan with cooking spray.
In a bowl, combine flour, oat bran, wheat germ, salt (No Salt), baking powder, baking soda, cinnamon, and nutmeg. Set aside.
In a mixer bowl, combine brown sugar, apple sauce, and vanilla and beat on low speed until blended and mostly dissolved. Add in eggs and mix until combined. Add bananas and mix until combined. While the mixer is running, add in flour mixture slowly, until all is just combined. Remove beaters and stir in chopped walnuts and raisins.
Scoop into mini-muffin pan (filling each up about 3/4 full) and bake for 10-15 min. or until toothpick inserted in the middle comes out clean.
Let cool on counter 10 minutes before removing from muffin pan. Enjoy!
Makes about 30 mini-muffins.
