Brown Rice Tabouli

Ingredients
2 cups cooked, short-grain brown rice2 cups chopped fresh parsley1/2 cucumber, peeled & chopped1 huge tomato, chopped (that's all I had, you should add more)4 green onions, choppedthe juice of 1 medium lemon2 Tbsp olive oilpeppersea salt
Directions
Cook rice as directed.
While rice is cooking, chop other ingredients.

Mix lemon juice, olive oil, salt and pepper with cooked rice, set aside. Add all other ingredients and mix. Adjust seasoning to taste. May want to add lemon juice. If possible, add liquids to rice while it's warm.
