Eggplant Lasagna

Ingredients
1 large can of tomato puree1 can tomato paste.5 lb 93% ground beef1 cup cottage cheese2 T freshly grated parmesian cheeseI eggplant, peeled1 cup Mozzerella cheese
Directions
Brown hamburger and drain, add tomato puree and tomato paste. Season sauce with 2 T of italian seasoning. Simmer for 15 minutes
While it is simmering mix the cottage cheese, parmesian cheese and 1T of parsley flakes
Cut eggplant into long strips (about 1/4 inch thick)
When sauce it finished, line the bottom of a pan with eggplant strips, top with 1/2 of the sauce then 1/2 of the cottage cheese mixture and top with 1/2 of the cheese (two layers).
Bake at 350 for 30 minutes
