Baked Chicken Tortilla Casserole

Ingredients
Directions
2 boneless skinless chicken breasts (diced)1 tbsp olive oil1 green pepper (diced)1 red pepper (diced)1 onion (purple are best!) (diced)1 cup diced tomatoes1/2 cup low fat mozzarella cheese6 whole wheat tortillasTop with fat-free sour cream and extra cheese if desired
In saucepan, cook chicken with olive oil and desired seasonings (cayenne, thyme, oregano, garlic, etc).
Once chicken has no pink, add in peppers and onion.
Saute' for approx 5-6 min and then add in the tomatoes and cheese.
Line a large casserole dish place with tin foil. P
ut some of the chicken mixture into each tortilla and roll up.
Place side by side in casserole dish.
Bake at 350 for approx 20 minutes, with a layer of tinfoil covering the top (the last 5 should be uncovered though).
Serve with sour cream.

Excellent. I did 1/2 of the recipe w. cheese and 1/2 w.o. I was prepared to add cheese later if it didn't turn out well without my deletion. But, honestly, I liked this recipe best without cheese. The tortillas were enough to add interest! The peppers/onions piled high made the chicken incredible. - 4/25/10

I threw in some Epicure Sovalaki seasons when browing the chicken, then I put the cheese right on the tortillas so I knew how much was in each one (less for me, more for the hubby). I threw the toms. on top as I'm not a fan of cooked tomatos. My husbands response "now these you can make any night!" - 10/17/08
