4 c. thinly sliced zucchini1 c. chopped onions1/4 c. Smart Balance Butter1/4 c. Extra Virgin Olive Oil2 T. parsley flakes1/2 t. salt1/2 t. pepper1/4 t. sweet basil1/2 t. oregano4 eggs, well beaten12 oz. mozzarella cheese2 (8 oz) cans crescent dinner rolls2 tsp. Dijon mustard
Preheat oven to 325. Saute zucchini and onions in butter and olive oil. Stir in all seasonings. Blend eggs and cheese into vegetable mixture. Spread dough and place on 11 inch pie pan or 12 x 8 inch baking pan or 2-8 inch pie pans. Spread crust with mustard. Pour in mixture.
Bake 18 - 20 minutes.
Let stand 10 minutes before serving.
