Lemon, Garlic & Herb Chicken

Ingredients
Chicken Breast, no skin, 32 ouncesChicken Broth, 1 cup (8 fl oz) Onions, raw, .5 medium (2-1/2" dia) Olive Oil, 2 tbspLemon juice, 8 tbsp (2 lemons) (divided) Zest from 1 lemonMrs. Dash (R) Garlic & Herb Seasoning Blend, 2 tsp
Directions
Marinate Chicken in seasoning, olive oil and 1/2 lemon juice for 20-30 minutes. Pre-heat skillet and spray with non-stick cooking spray. Add chicken to hot pan and allow to cook undisturbed on first side for 5-6 mintues. Flip and cook, undisturbed, for 5-6 more minutes. Continue cooking, flipping every 5 minutes until done. Remove chicken from pan and cover with aluminum foil to keep warm. In the same pan, add a touch more olive oil (I use a spray mister) and saute onion (diced) until translucent, approximately 3-4 minutes. Add chicken broth and remaining lemon juice. Stir, removing brown bits from the bottom of the pan. Allow sauce to simmer for 10-15 minutes until it reduces slightly. Return chicken to pan to coat with sauce. Serve chicken and sauce over brown rice or favorite grain (not included in nutritional information)
