Multi Bean Vegan Chili

Ingredients
Eggplant, fresh, 3 cup, cubesPeppers, sweet, red, raw, sliced, 3 cup Garlic, 2 clove chopped Vegetable Broth, 2 cupRed Ripe Tomatoes, 6 cup, pureed or diced Lentils, .25 cup Beans, red kidney, .25 cup Beans, pinto, .25 cup Beans, black, .25 cup White bean , .25Chili powder, 1 tbsp 4 cup water1Tbls Chinese red chili sause or choopped jalepenoSalt and pepper to taste
Directions
Dice eggplant, tomato, red bell pepper, garlic, jalepeno and add to slow cooker. Add the mixed beans, water, vegetable broth or vegetable boulion cube, chili powder, salt and pepper to taste and cook on low over night.
