Italian Stuffed Tomatoes

6 medium ripe firm tomatoes2 tsp olive oil.5 chopped onion.5 cup chopped green pepper1 clove garlic, minced1 can 16oz vegetarian baked beans1 tbsp balsamic vinegar
Cut 1/2 inch off tops of tomatoes. remove pulp from tomato with knife, leaving a thick shell for filling being careful not to cut through bottoms. Chop pulp and reserve 1/2 cup.
Sautee onion, pepper, and garlic in olive oil until almost tender - 2-3 minutes. Stir in tomato pulp, baked beans & vinegar. Cook until hot.
Fill tomato shells with mixture. Place tomatoes on baking sheet and bake at 350 degrees for 20-25 minutes, or until tomatoes are cooked.
