Fire Roasted Chicken

Ingredients
1 lb chicken breast, thin sliced2 Tbsp Extra Virgin Olive Oil2 Tbsp fire roasted red peppers, diced2 Tbsp sun dried tomatoes packed in oil, drained and diced2 cloves fresh garlic, minced3 dashes of basil3 dashes of oregano2oz mozzarella cheese, fine shredded
Directions
Place chicken in a large flat bottomed bowl and drizzle with 1 Tbsp EVOO. Stir in minced garlic to coat chicken then sprinkle lightly with basil and oregano. In a separate bowl, mix peppers, tomatoes, and 1 Tbsp EVOO. Add chicken to a medium hot skillet that has been lightly coated with non-stick cook spray. Brown chicken on each side. Add tomato / pepper mix to skillet and stir in amongst the chicken. Allow all to cook until chicken is no longer pink in the center. Scrape tomato/pepper mix to center and place about a Tbsp of the mix atop each piece of chicken. Reduce heat to low and sprinkle mozzarella cheese on top of this mix and allow to melt, covering skillet with a lid if needed to expedite the process. Garnish with fresh basil if desired.
