Acapulco Rice

Ingredients
16 oz Tomato Sauce1/2 c Water3 ts Chili Powder1 1/2 c Minute Rice1/2 c Crushed Tortilla Chips1/2 c Shredded Cheddar Cheese 1/4 c Diced Green Pepper
Directions
In a medium sized saucepan, combine tomato sauce, water, chilli poweder, and diced green pepper and bring to a full boil. Stir in rice. Cover. Stir every so often so rice doesn't stick to bottom. Once rice is cooked, let sit for a few minutes and then add the crushed tortilla chips and cheese.

I like to add extra chilli powder because I like mine spicy, but this is a more mild version. Some people also like to serve with lettuce and sour cream. Enjoy!! :)
