Cooking Spray2 Carrots, peeled and diced1 Large Onion, diced4 Tsp Garlic, minced6 cups Fat-Free Chicken or Vegetable Broth1/2 Head of Cabbage, chopped1/2 Lb Frozen Green Beans2 Tbsp Tomato Paste1 Tsp Dried Basil1 Tsp Dried Oregano1 Tsp Kosher Salt1 Large Zucchini, diced
Spray Dutch oven with cooking spray and heat on Medium High. Add the carrots, onions and garlic and cook for approximately 5 minutes. Add all of the remaining ingredients EXCEPT the Zucchini and bring to a boil. Cover and reduce the heat to Medium; simmer for approx. 15 minutes or until the beans are tender. Add the Zucchini and cook until the Zucchini are tender. Serve or freeze in individual serving containers.

I didn't love this. The broth was tasty with tomatoes and seasonings, but very high in sodium. Maybe it was the cabbage that turned me off. Both times I ate it I couldn't bring myself to finish the bowl, especially after it cooled a bit. This would be good for the 1st week when you are starving. - 1/18/11
