Chardonnay Mushroom Risotto

Ingredients
1 1/2 C arborio rice1 QT low sodium vegetable broth1/2 C chicken broth1/2 bottle cheap chardonnay1 glove garlic, minced1/2 yellow onion, minced3 mushrooms, chopped2Tolive oil, divided1t. sea salt1t fresh ground pepper
Directions
First make stock: heat 1T olive oil to medium, add onion, garlic and mushrooms. Cook until tender. Add vegetable and chicken stocks, chardonnay, salt and pepper.

In skillet: heat 1T olive oil to medium, add rice, then add liquid about a cup at a time, stirring frequently until stock is mostly absorbed and rice is tender and creamy.
