Stuffed green pepper casserole

Ingredients
1 lb lean ground beef1 large green pepper, diced1 cup long grain rice1 1/2 cups water4 cups tomato juice1/2 tsp garlic powder1/2 tsp black pepper1/2 tsp salt
Directions
Put rice and water in covered pot until all water has evaporated (rice will be al dente). In a large casserole dish mix ground beef and tomato juice until blended. Add garlic, pepper and salt. Mix. When rice is cooked add to casserole. Stir until all blended well. Place in microwave uncovered and cook on high for 30 minutes, stirring every 10 minutes or so. Remove from microwave and allow to stand for at least 5 minutes before serving. Adjust seasonings to taste. Serve.
