Feta and Zucchini Fritters

Ingredients
1 med. zucchini, grated1/2 cup egg substitute1 1/2 cup flour1 small onion, diced4 oz. low fat Feta cheese1/4 cup olive oil, for frying
Directions
Mix grated zucchini, egg substitute, flour, feta, and onion in a bowl. Blend well. You want a thick consistency..if too thin, add flour, if too thick, add water.

Heat non-stick pan, then add oil. Swirl pan to distribute oil. Drop batter (about 2 tbsp.) into pan, and brown on each side.
