Fruit Salad with Quinoa

Ingredients
1 cup quinoa1/2 cup grapefruit juice3 tablespoons honey1/2 teaspoon lime zest2 cups fresh fruit (whatever is in season)fresh mint sprigs for garnish
Directions
Cook quinoa, cool and drain.

whisk together juice, zest, honey.

Cut fruit into bite sized pieces and toss with quinoa and dressing. Decorate with mint.

    I made this today. It was refreshing and a nice salad to pair with my grilled chicken. I think however I would like it to be a little more flavorful. Maybe adding some non-fat vanilla yogurt would be a good thing. I might try that. - 6/23/11
