Lemon Pepper Chicken StirFry

1 tsp olive oil2 cloves garlic1 1/2 med onion2 tsp fresh ginger4 button mushrooms1 cup green capsicum1 cup red capsicum1 cup broccoli150g or one whole chicken breast, no skin or fat.lemon juice from 1/2 lemonfreshly ground black pepper
Heat oil in pan. Chop onions, garlic and ginger. Saute these in oil. Chop and add capsicums, mushrooms and broccoli. Once onions are translucent and vege are half cooked take vege out of pan and add chopped chicken. Lightly brown then squeeze the juice from half a lemon into the pan over the chicken and freshly grind some black pepper in too. Fry in juice and pepper until color is rich and chicken pretty much cooked. Tip vage back in pan and fry up for a couple more minutes. Serve on or beside brown rice with a wedge of lemon. Perfect Dinner!!
