Zucchini or carrot bread

Ingredients
1.5 cups whole wheat flour.5 tsp baking soda.5 tsp baking powder.5 tsp salt1.5 tsp cinnamon.5 cup unsweetened apple sauce.5 cup honey or agave nectar2 eggs beaten1 tsp pure vanilla extract1.5 cups grated zucchini.5 cup chopped walnuts
Directions
Mix all dry ingredients well. Beat apple sauce and eggs until fluffy. Add all other wet ingredients and mix very well. Add dry ingredients to the wet ingredients. Fold in the walnuts last and very gently. Pour into a greased 5x9" loaf pan. Bake at 350 for 55-60 mins. May substitute carrots for zucchini or use half of each. Makes 12 servings. May be frozen.
