Frito Salad

Ingredients

1 head of lettuce chopped1-2 cups of romaine(green leaf) lettuce1 can kidney beans (rinsed)2 shallots (green part) chopped1 can pinto beans (rinsed) (texas ranch beans will work too, but rinse them)2 cups of cubed cheddar cheese (small cubes)1 cup of mozzarella cheese cubed5 hardboiled eggs (use the white part only - chopped) 6 tbs of FF catalina dressing2.25 oz of Fritos
Hard boil the eggs and discard the yellow.
Get a large serving bowl
In the bowl place the first 8 ingredients and mix well. Right before serving mix in the dressing and fritos. You can add cubed ham or turkey to make it a main meal. (but it will add to the calories/fat etc). We love this at our house! Add more or less dressing to taste. Serve with a grilled chicken breast for a meal!
