Aunt Jennie's Crepes

Flour, white, 1 cupMilk, nonfat, 1.25 cupSalt, .25 tspEgg, fresh, 3 mediumOlive Oil, 2.5 tbspMakes 12 crepes
Mix wet ingredients in a mixer. Add in dry ingredients and mix til batter consistency.
Use non-stick pan and heat to med high heat.
Add scant 1/3 cup batter to pan and turn pan repeatedly to coat surface. It is important to make sure the batter thinly coats the bottom of the pan.
Loosen the edges after a few seconds. Once crepe can move freely in the pan (around 30/40 seconds) flip over to other side. It will take only a few seconds to cook second side. Remove from pan and put on glass plate to keep warm.
Serve with fruit, yogurt, jam, or whatever else you want! (toppings not included in nutritional information)
