Fluffy Whole Wheat Buttermilk Pancakes

1 egg, beaten1 c. lowfat buttermilk1 t. vanilla extract2 T oil (optional)1 c. whole wheat or spelt flour2 T. flaxseed meal1 t. baking powder1/2 t. baking soda12 t. salt
Beat egg in bowl; add buttermilk and beat until combined. Add oil if desired, but I never use it (helps oil the griddle).
On top of buttermilk, sprinkle flour, then flaxseed meal, then baking powder, baking soda and salt. Mix with a fork until just combined; mix in 1-3 T. cool water to lighten if necessary.
Bake on nonstick griddle at 400 degrees or medium high heat. Makes 8-10 pancakes.
