1/2 Cup 4% cottage cheese1 ounce diced Gouda cheese1 ounce crumbled dill Havarti4 slices spelt bread, very thinly sliced1 clove garlic1 tbsp Extra virgin olive oil
You can substitute the cheeses for your favorite kinds or swap the full fat cottage cheese out for low or fat free.
On a small mixing bowl mix together Gouda, Havarti and cottage cheese. Use a garlic press on one close of garlic and add to mixture.
In a wide and shallow dish whisk one egg and dip bread, coating one side of the bread.
Heat olive oil to a large skillet and place the bread in egg side down. Add half the cheese mixture to two pieces of bread and place the remaining slices on top. Cover the skillet and cook for about 3 to 5 minutes until the cheese mixture is melted. Plate sandwiches and let cool for a minute or two before cutting. Makes two sandwiches.
