Bison Stuffed Peppers

Ingredients
6 lg red peppers1 lb ground bison2 cups brown rice, cooked1 can Rotel tomatoes3 cloves garlic1 (15 oz) can tomato sauce
Directions
Cut tops off peppers and remove seeds and membranes. Chop tops. Cooke bison, garlic and pepper tops until meat is browned. Drain meat and mix with cooked rice and tomatoes. Stuff peppers and place in baking pan. Pour tomato sauce evenly over peppers. Cover and bake at 400 for 45 minutes. (optional: sprinkle with shredded cheese and return, uncovered, to oven until cheese is melted - not included in calories).
