Mocha Oat Mini-Muffins

1.25 cups whole wheat flour.75 cup rolled oats1/3 cup dark/dutch cocoa powder1 tbsp baking powder1 packet Starbucks Via coffee granules (can use more for more coffee flavor, or less to omit it).5 cup coconut oil (can substitute melted margarine or other oil)3 egg whites1 tsp vanilla extract1 cup light soy milk
Preheat oven to 400 degrees F.
Mix dry ingredients in a large bowl and set aside.
Combine all wet ingredients in a small bowl and incorporate into the dry ingredients.
Spray a mini-muffin pan with non-stick spray and fill the wells 3/4 full. Bake for 10 minutes or until toothpick comes out clean. Remove muffins from pan and let cool on a wire rack.
Makes approximately 44 mini-muffins.
Note: If you want to make regular-sized muffins, increase cooking time to 15 minutes or until toothpick comes out clean.
