2 yellow or red bell peppers1 zucchini1 yellow squash1 walla walla onion2 portobello mushroomsSlice and marinate for 15 mins minimum in mix of 1/4 c balsalmic vinegar and 1/4 c olive oil (add any herbs you'd like or use vinegrette dressing if you prefer)Grill until the peppers are soft (since they cook the slowest you may want them closer to the coals at first)Add thin slices of fresh mozzerella right after taking off the grill so it melts. Then you can eat this as a meal, a side or put it on some toasted bread for a killer sandwich
Slice veggies, marinate 15+ mins then grill till soft. Top with mozz while still hot. Enjoy!
