Cooking spray1 medium vidalia onion, chopped1 tbsp olive oil10 oz sliced fresh mushrooms3 tbsp minced garlic1 1/2 cups arborio rice3 cups fat free, low sodium chicken broth2 cups water6 light laughing cow wedges (I used swiss)1/4 cup grated parmesan
Spray a non-stick pan with cooking spray. Sautee onions until translucent. Add olive oil, garlic, mushrooms, and rice. Stir fry for 3 minutes. Add chicken broth and water 1 cup at a time until the rice has soaked up all the liquid, stirring constantly. Once all the liquid has been absorbed, add laughing cow wedges and parmesan. Stir until cheese is melted and mixed well. Makes 7 1-cup servings.
