Mexican Rice

Ingredients
2 tbsp. oil1 cup white rice1/2 cup chopped onions2 garlic cloves (finely chopped)2 cups chicken stock1/2 cup tomato saucesalt and pepper to taste
Directions
1. Warm oil in sauce pan
2. Add onions, garlic and rice to pan and brown.
3. Add chicken stock, tomato sauce, salt and pepper to pan and bring to a boil.
4. Reduce heat and simmer for approximately 25 minutes or until rice is tender.
