Moussaka – cheat's low fat

1 small onion finely chopped500 g lean beef mince1 tsp cinnamon1 tsp all spice2 cloves garlic finely minced1 large eggplant400 g raw potatoes230g tin of tomatoes (400g if you prefer)1 tsp fresh thyme1 tsp fresh oreganosalt and pepper150g fat free yoghurt1 egg50g grated fat free/ lighter cheese
Boil the potatoes until tender, slice thinly.
Prick the aubergine and cook in the microwave for 3 - 5 minutes
Meanwhile, fry the mince on a high heat (no need to add oil). When fried, stir in the spices and herbs. Season with salt and pepper.
Spread half the meat mixture on the bottom of an ovenproof dish, top with sliced potatoes, spread the rest of the mince on top of this.
Slice the cooked aubergine and arrange this on top of the lamb mince.
Mix together the egg, yoghurt and cheese. Spread this over the top of the aubergine.
Bake at 180˚C for up to an hour – or until the top is nicely browned. Serve with crusty bread.
