Vegetarian Fettuccine Alfredo with Chicken. Spinach & Mushrooms

Ingredients
1 package house foods tofu shirataki fettuccine shaped noodles2 T nonfat Greek yogurt (like Fage or Trader Joe's brands)1t minced garlic1 T Extra virgin olive oil1 cup sliced fresh mushrooms (I like baby portabellas best)2 cups fresh baby spinach, or 1 cup frozen spinach, well drained2 wedges laughing cow cheese2 servings Trader Joe's Chicken-less strips (approximately 2/3 of one package, or 18 strips)1T grated parmesan cheesesalt & pepper, to taste
Directions
Prepare shirataki noodles according to package directions and set aside.
In a saucepan, heat olive oil and garlic. Add in chicken-less strips, mushrooms, and garlic and sautee over medium heat until spinach and mushrooms are wilted and strips are browned evenly.
Reduce heat to low and add in laughing cow cheese, yogurt, and parmesan and stir together with contents of pan. Toss in shirataki noodles and coat evenly with sauce. Add salt and pepper to taste and enjoy! Makes 2 servings.

    just wanted to mention that parmesan cheeses contain animal rennet which comes from the inner lining of the stomach ... so this might not be "vegetarian" - 11/26/10
