Breakfast Cassarole

3 slices whole grain bread, cubed2 whole eggs 1 egg white1/2 cup low fat milk2 tablespoons nonfat plain yogurtSaltPepperCilantro3/4 cup reduced fat sharp cheddar
1. Preheat oven to 400
2. Spray small cassarole dish 8 by 8 works well with cooking spray
3. Cube bread and arrange evenly along bottom of cassarole dish
4. Combine all ingredients except cheese in a small mixing bowl
5. Pour over bread.
6. Spread cheese evenly along top.
7. Cover with foil and bake for 15 minutes.
8. Remove foil and continue baking for 10 minutes.
9. Let cool 5 minutes, slice into 6 even pieces
10. Enjoy with a seasonal fruit salad
