Easy Spicy Salsa Chicken Salad for One

3 oz boneless, skinless Chicken Breast1/4 cup Salsa1/8 cup chopped green pepper1/8 cup chopped onion1/4 tsp ground cumin1/4 tsp garlic powder1/4 tsp dried parsley flakes1/4 tsp red pepper flakessalt and pepper to taste1 tbsp shredded Cheddar Cheese1 cup shredded lettuce1/4 cup chopped tomatoes
Cook chicken breast on stovetop with Pam spray until cooked through.
In a separate bowl, mix salsa, green peppers, onion and seasonings together.
When chicken is done, put salsa mix in with chicken and cook covered until warmed, about 5 minutes. (I also added a little water to avoid burning.)
To serve, place lettuce on a plate, top with chicken and salsa, cheese, and tomatoes.
Serves 1.
