Peanut coleslaw

Ingredients
1/2 head cabbage (chopped)1/3 head red cabbage (chopped)1 1/2 cup frozen edamame1/4 cup chopped green onion1 clove garlic1 package chicken-flavored ramen1/2 bell pepper1 can water chestnutDressing:rice wine vinegar1 T mustard1 T sesame oil1 T peanut butter
Directions
Crush ramen noodles and add to bottom of a large bowl. Set aside seasoning packet. Add garlic, onion, pepper, then edamame. Add cabbage to top of mix.

In a separate bowl whisk together sesame oil, vinegar, seasoning packet, mustard and peanut butter. Pour on top of cabbage and stir until well mixed.

Makes approximately 10 2-cup servings.
