Mom's Whole Grain Muffins

1.5 cup Whole Wheat Flour.75 cup Whole Ground Flaxseed Meal (Bob's Red Mill).75 cup 10 Grain Hot Cereal (Bob's Red Mill).5 cup Brown Sugar2 tsp Baking Soda1 tsp Baking Powder.5 tsp Salt2 tsp Cinnamon1.5 cup Grated Carrots2 Apples (medium size), shredded1 Banana (medium size), smashed.5 cup Almonds, chopped.75 cup Milk, non-fat2 Eggs, beaten1 tsp Vanilla Extract
1. Preheat oven to 350 degrees. Grease and flour 24 ct. muffin tins.
2. Mix together dry ingredients in large bowl
3. Stir in carrots, apples, banana, and nuts
4. Combine milk, beaten eggs, and vanilla. Stir into other ingredients until just moistened. Don't over mix!
5. Fill muffin cups 3/4 full and bake 15-20 minutes
Makes 24 muffins
